Breaded Dijon Mustard Chicken

I found this recipe created by  Barefoot Contessa and adapted it to a healthy take... 

4 pieces of Chicken Breast about 2 pounds
1/2 cup white wine
1/2 cup Dijon Mustard
Lemon Zest and juice
Olive oil
Salt and pepper
Tablespoon of Herb De Provence  
2 cups of gluten free bread crumbs

Mix the mustard and wine together well in one bowl.  Then take bread crumbs and add zest, salt and pepper and Herb De Provence.  Drizzle the bread crumbs with EVOO and then mix well.  
Salt and pepper the chicken well.  Then dredge the chicken in the mustard then coat with bread crumbs.  Now because there is no butter or egg the bread crumbs are loose so pat with any extra bread crumbs for full coverage.  Drizzle the chicken again with EVOO.  Bake at 400 degrees until done about 40 minutes.  At the last 10 minute squeeze the lemon juice on the the cutlets.
