1 head of Cauliflower, steamed and mashed
Salt and Pepper to taste
1 tablespoon of Nutritional yeast
2 tablespoon of arrow root flour
1 egg beaten
1/2 teaspoon of garlic powder
1/2 teaspoon onion powder
sprinkle of cayenne power
1 tablespoon of parsley
Sprinkle of paprika
Steam cauliflower in microwave after trimming all the green around the core for 15 minutes. Put in the fridge for about 15 minutes to cool. If you put in the egg while hot it will scramble. Mash with a potato masher and remove the core. Add all the spices, nutritional yeast, egg and flour, omit paprika and evoo until the end. Mix well. Then like making meatballs put a scoop in your palm of your hand roll and the flatten into a round pancake about a 1/4 inch thick. This make about 9 cakes. Pre-heat oven while mixing ingredients at 425. Place the cakes on parchment paper. Drizzle evoo and sprinkle paprika. Cook for 10 minutes, flip and about 5-7 on the other side. You want a nice crispy crust with a soft inside.
