After reading enough of my food blogs you realized that I am completely in love with a good ol' boiled egg. I will purposely cook too much just so I can put an egg on it the following day. So it happened again. I took my left over rolled and stuffed chicken and created a sweet potato and kale hash just to put an egg on it. Now just because you don't have chicken stuffed with peppers and asparagus doesn't mean you can't make this dish. Any leftover protein will.
8 slices of bacon chopped
1 bag of steam able sweet potatoes in a bag or 3 large sweet potatoes
10 oz of spinach kale mix
1 lemon zest and juice
1/2 cup chicken stock
left over protein
4 eggs to six eggs...depending on the amount of leftovers
Spices: Salt, pepper, cayenne, and paprika....Parsley for looks at the end
Preheat the oven 425.
In a cast iron skillet saute bacon to render fat, then add in chopped onion, steam sweet potatoes cut in 1/8. Sprinkle salt, pepper, cayenne and paprika. Get a nice browning on the potatoes and then wilt in spinach and kale mix. Add in the zest and lemon juice and pour in the stock. Pour slowly, you don't want to drown the food. Add your leftover protein back in and mix gently. Then add enough stock to cover the bottom of the pan. Crack 1 egg of in each corner on the pan. Put into the oven and cook for about 10 minute. You want a runny egg so pour yourself a glass of wine and stay close to the oven.
This meal took about 30 minutes start to finish. Things to keep in mind when using left over lean protein is don't heat to much and add liquid to keep it from drying out.
Depending on amount of leftovers this could feed about 4 to 6 people.
