2 large rip avocado
1/2 head of roasted garlic about 4 to 6 cloves depending on size 2 large table spoon of bacon grease salt and pepper to taste 1/2 lemon juice with zest Scoop your avocado into your food processor. (if you don't have one it's OK get a potato masher and whisk) Add roasted garlic, bacon grease, salt and pepper, and lemon juice and zest. Mix then add to any pasta, rice whole wheat. Makes for a great spread in a grinder or veggie dip...really it is your imagination. I served this with my famous pineapple chicken with a side of brown rice pasta. I would have taken a picture but I was too busy eating it! Now don't forget to get the bacon grease you need the bacon. Chop it, sprinkle on top, or do what my husband did and grab a big piece of bacon and dip it right in! P.S. While you are cooking the bacon in a 375 degree oven, take a head of garlic, cut the top of and drizzle with EVOO and Salt and Pepper. Wrap it in foil and place in the same oven. Bacon takes approx. 25 minutes in the oven. Take bacon out to cool and jack up the heat to 400 degree for another 10-15 minutes. The garlic becomes this amazingly sweet, creamy deliciousness that can be added to most anything.
