Mini Bacon Meatloaf

​Mini Bacon Meatloaf
1 pound of ground turkey
½ onion minced
½ yellow pepper minced
Salt and pepper to taste
1 tablespoon dried parsley
½ teaspoon garlic powder
1 pound of bacon cut in half
​1 egg

Mix all ingredients together except the bacon. 
​ Mix the meat lightly so that it is not too tough.  Take 4 little oven proof bowls and line them with the ½ pieces of bacon, 5 pieces each.  Place ¼ of the turkey mix into each bowl.  
Place in a preheated oven at 425.  Cook for about 30-35 minutes. Once the meat and bacon starts to shrink you know it is ready to flip.  Take out of oven and in a lined and heated cookie sheet carefully take out the mini meatloaf and put on a cookie sheet.  Then crank the heat to 475 for about 15 minutes. You are looking for the bacon to brown nicely..the turkey is cooked through.  
Serve with potatoes and veggies of choice.
