Ok so I'm not going to spend a lot of time writing the recipe to my pizza....because everyone has their own thing.
Tonight's pizza was Caulipower crust with leftover pulled crockpot chicken, sauteed mushroom and spinach, caramelized onions and shredded almond milk mozzarella.
The star of the show was my roasted chickpeas. I took 1 can of 14 ounce chickpeas, rinced, drained and dried. The drying part is the most important. I place them on a paper towel for 30 minutes. Next, I placed them on a lined cookie sheet. I like parchment paper. Drizzle with evoo, salt, pepper, cayenne and paprika. Sprinkle and mix. Cook for about 20 minutes and set aside to cool. If you do it right they won't even make it to dinner!!! I put them generously on top of my delicious salad! ENJOY!!!!
