Ingredients: 2.5 lbs. of chicken 1 pepper sliced 1 onion sliced 1 jalapeno sliced 6 ounces of Nameste Beer 1 lemon juice 1 package of thin sliced noodles 1 Package of butter or bib lettuce 1 chopped tomato and avocado Rice wine vinegar Spices: 3 palm fulls of Salt 1 palm full maybe more of Pepper sprinkle cayenne (teaspoon) 1 palm full coriander
Place chicken in a crock pot on high for 4 hours. Add all the spices and lemon juice. Then 1/2 way through add peppers and onions. Also add in the beer and cover.
After 4 hours chicken should be easy to pull apart. Let it rest for a bit and get the rice noodles ready. Cook the noodles as directed in salted water. When noodles are done drain then rinse with water to stop the cooking process. Next, sprinkle with rice wine vinegar. Take noodles from strainer and then place on a bowl lined in a paper towel. Drizzle with EVOO.
