In the dairy free chicken place in a pan lined with parchment paper. Stuff and then salt and pepper, cayenne and paprika the outside. Drizzle with evoo.
Put chicken in a preheat 400 degree oven. In 30 minute turn the pan for even cooking. If needed drizzle a little more evoo for total browning. Cook for another 15 minutes and temp. Take out to rest at 165.
While resting you can saute pancetta, garlic and portabella mushrooms or make any veggie of choice. All in all this was amazing!
