Stuffed Peppers

This is the EASIEST MEAL PREP CHICKEN IN THE WORLD.  I do really mean it, it is.  
In crockpot add the following:
6 pieces of chicken breasts
1 yellow pepper sliced
1 onion sliced
1 jalapeno pepper sliced (if you want)
Fresh Cilantro chopped
Salt, pepper to taste
1 tablespoon, coriander, garlic powder onion powder 
1 lemon juiced, 1 lime juiced
Set on high 4 hours pull apart when ready. 

Take your color pepper of choice...I like to slice them width wise....preheat the oven 425 and on a cookie sheet, salt and pepper and drizzle olive oil on the pepper inside and out and cook open side down.  About twenty minutes and stuff and serve! 
I served on a delicious escarole salad.  As stated before you could meal prep this for the week....cut 3 peppers makes 6.  One for dinner 5 for the rest of the week add rice, quinoa, sweet potatoes.....whatever you would like.  Enjoy! 
This meal is 308 calories, 9.3 grams of fat, 30.1 gram of protein and 25 grams of Carbs.....not a bad deal.

I am a sucker of healthy meals right now because I am trying to live a healthier life. Now that I found the perfect recipe that can satisfy my needs, I am already looking forward for this! Though I admit that I am not really a huge fan of peppers, I felt that I need to try this anytime soon! Stuffed Peppers look nothing but a delicious food, that's why I am pretty sure that my family will love it. I just have to be very consistent on my what I want with its taste.
