1 Jalapeno Pepper chopped
1 Red and yellow pepper chopped
1 onion chopped
1 1/2 pounds of ground turkey
8 slices of bacon chopped
8 ounces of cherry tomatoes sliced in half
1/2 ground sausage
Spices on hand:
1 1/2 cups of microwavable brown rice
Juice of one lemon
12 ounces of chicken stock (just have the box handy because it depends on rice and what the dish might need that day)
Preheat your oven 425
Take the sliced bacon and render all fat. Take out of the pan and set aside. Saute all peppers and onion until the water is released. Season with salt and pepper. Pull out and set aside. Add a little evoo and brown sausage, remove and then brown the turkey. To the turkey add a solid palm-full of of salt, pepper, paprika, coriander and cayenne. While the turkey is cooking, put the rice in the microwave and steam to the directions of the box.
Once the turkey is browned (but not cooked all the way through) add back in all the veggies and sausage, squeeze in lemon juice and mix. Then add in rice with a pinch of saffron. Mix well and take the chicken stock and add enough to give moisture ( It may only need 4 to 6 ounces) then pat the rice mixture so the whole pan is nicely covered. Then put into the oven for about 10 minutes at 425 so that the rim of the rice is nice and crunchy!
Now you probably thought I forgot about the tomatoes. While the pan is in the oven saute the tomatoes with salt pepper and cilantro.
To serve take a giant spoon full or two, add the tomatoes and bacon and enjoy.
The dinner took about 60 minutes from start to finish and is more than enough for 6 people.
I had left overs the following night and I put a poached on top....LOVE!
